Full Screen Playback worked in the older (OS9) default versions of
QuickTime.  The Pro fee used to be necessary only to unlock the editing
functionality you mention.

These kinds of random decisions from marketing at apple.com are what drive
me crazy about that platform.  There are numerous other more serious but
similar cases of losing functionality through an 'upgrade'. 

Of course, if you have infinite money you enjoy throwing at a system you
can't control, these types of manipulations won't upset you :)
