We run 8 disks, and keep 2 as hot spare. :-)

Based on http://raid.com/04_01_03.html, I don't think I would use it as a 
software raid. Also this one point is a killer:

"Transaction rate equal to that of a single disk drive at best (if spindles 
are synchronized)"
