Most sysadmins I know that use Postfix as their MTA say that greylisting
(IIRC they mostly all use postgrey) cuts something like 60-95% of the
spam they get -- the number varies depending on who you talk to, but
they are all unanimous in saying that it cuts a significant percent of
their spam.

The ones I know that don't use it only do so because they can't afford
the lag -- a lot of people expect email to be more or less
instantaneous. This would largely depend on your users however.

Are you using a recent version? SA rarely flags ham as spam for me.
